AMERICAN HONEYS: BEE RAW
If you think that all honey tastes the same, you are sadly mistaken. I discovered varietal honey's while working on our Blackbird Blackberry Picking event this past summer. Blackberries were picked but the end result, Blackbird's Blackberry Syrup, was never completed. So little time and such big dreams. After the summer sun faded I tried some Oregon blackberry honey that we were selling at the Blackbird Candy Shoppe to remedy the pain of my failure. It was shockingly different from the standard squeezy bear clover honey I've used forever. My palette was changed forever.
You see, the flavor of the honey depends on the nectar they collect. If they collect from a single source, the honey will taste slightly like the sage or blueberry flowers they've been feeding off of. This is what Bee Raw focuses on; working with artisnal, single source beekeepers around the country to collect the best unfiltered and distinct tasting honeys.
